Italian Roasted Tomatoes

Hello again! I’m so happy to be back, I know I’ve been gone for a while working on some new big projects but I’m here and I have about a million recipes for you. Okay, not a million, maybe some day, but definitely a lot and it’s starting with this oldie but goodie, one of my lifelong favorites: Italian Roasted Tomatoes!

Mocha Latte Truffles

These mocha latte truffles are as easy as it get- just pulse and roll- they’re as delicious as something called “mocha latte truffles” sounds like it should be AND, as if this recipe even needed to get better, they’re actually healthy. What? Oh yes, welcome to the magic of date truffles!

Spiced Lentil Soup

Warm and hearty Spiced Lentil Soup with tomatoes and spinach, perfect for chilly winter dinners! #vegan #glutenfree #healthy #recipes

Flannel shirts, hot cups of tea, and Spiced Lentil Soup, yup, winter’s here and I am so excited! Why? Because it’s soup season! Maybe I’m just a little weird, but you know that interview question “if you could only eat one food for the rest of your life what would it be?” and any normal person would probably say mac and cheese or guacamole or chocolate? Yeah, I say soup. It’s warm and filling and I can fill it with my favorite things so whatever I’m in the mood for, it’s always the right choice. That’s not even mentioning all the perks of one pot meals! Therefore, I warn you now, Fresh Fit Foodie is probably going to turn into Fresh Fit Soupie until I have to pack away my fuzzy winter socks!

Sweet Vanilla Almond Granola

Easy & totally customizable homemade granola! #vegan #glutenfree #healthy #recipes

Okay, tonight’s post is a split surgery update and tasty easy noms partnership. On the surgery front, well, we’ll get to that. On the noms side, this Sweet Vanilla Almond Granola is the ultimate whatever-you’ve-got pantry clean out recipe. It’s perfect for everything from simple snacking to turning your favorite yogurt into a filling meal!

Sriracha Hummus

Sriracha Hummus- just the right spice to make pretty much everything better! #vegan #glutenfree #recipes #healthy

Let’s just call this Sriracha Hummus recipe my gift to you this holiday season. It’s quick, it’s cheap, it’s creamy and smooth and just about the most delicious thing you could do to your food. Seriously, carrots? WAY better with sriracha hummus. Rice bowls? DEFINITELY better with sriracha hummus. Sandwiches? This stuff was made for sandwiches it’s so good on them (okay I actually did design  this recipe for a sandwich but that’s besides the point). Really, if you like spicy food at all you owe it to yourself to make a batch of sriracha hummus, it’s that good.

Fresh Tomato White Bean Soup

Fresh Tomato White Bean Soup- from scratch made easy with fresh produce, #glutenfree pasta, and protein filled beans! #vegan #healthy #recipes

Fresh is really the key word in this Fresh Tomato White Bean Soup. Everything that’s good and wonderful and delicious about this soup is thanks to the heaps of fresh tomato, fresh onion, fresh garlic, fresh basil. It might be (finally!) getting chilly outside, but there’s so much rich flavor when you make everything from scratch it’s worth a little extra chopping. And trust me, this vegan & gluten free soup is so delicious and easy to make everyone in your family with love it!

One Pot Pumpkin Chili

One Pot Pumpkin Chili- the best warming fall comfort food! This version is #vegan #glutenfree and #healthy too! #recipes

November, let’s talk. See, Thanksgiving is less than 3 weeks away and by all accounts I should be bundling up in all the flannel and puffy things I can find. I should be waist deep in rainbow leaves and drinking hot chocolate or apple cider on my chilly early morning walk home from 6 AM yoga. But no, November, apparently you’ve decided it’s actually April and we’re just going to skip over that whole “Fall” season (let’s not even start on “Winter”)! November, you’ve decided I still need to wear tank tops when I work out BUT no matter how strangely is-the-world-ending-ly warm you’ve made this month, you won’t keep me from hoarding pumpkin recipes like a squirrel hoarding nuts! (Which they are still doing despite your best efforts).

Balsamic Rosemary Brussels Sprouts

Balsamic & Rosemary Brussels Sprouts- such an easy side but so delicious! Perfect Thanksgiving recipe! #healthy #glutenfree #vegan #recipe

Weird fact about me: I think vegetables are beautiful, as in, little works of art. I know I’m not alone either because when I told my wedding florist that I wanted vegetables in my centerpieces he knew exactly what I was talking about. And so come June 21, 2014, our tables had an eclectic mix of flowers, lantern candles, chalkboard table numbers, asparagus wrapped vases, and, yes, terra cotta pots of raw brussels sprouts. Now when it comes to eating, well, perfectly caramelized balsamic rosemary brussels sprouts? It might not be centerpiece ready but that’s pretty beautiful in my book too!

Sriracha Sweet Potato Garden Bowl

Sriracha Sweet Potato Garden Bowl #vegan #glutenfree #lunch #health

Like all garden bowls, this Sriracha Sweet Potato Garden Bowl is vegan and gluten free, but it gets a special star in my book for somehow letting me eat more Sriracha than anyone ever should! Seriously, my husband has gone from predicting I’ll become a mummy (because I like everything saalllltyyy) to saying I’m just going to melt from the spicy sriracha fire! Besides my obsession with this chili garlic heaven, though,  this garden packs the usual brown rice, some tomatoes, roasted sweet potato because sweet potato and sriracha go together like peanut butter and jelly, and then the not-so-usual green pea hummus. Yup, green peas. In hummus. And I’ll admit, I was really skeptical about this one… really skeptical… but trust me on this: the sweet mildness of the peas mixed with the hot sauce fire and all balanced out with the creamy roasted tots, it’s a winner, it just is!

Pecan Roasted Butternut Squash

Sweet Pecan Roasted Butternut Squash- the perfect #healthy #vegan fall side! #recipes #glutenfree

I know what you’re thinking “not ANOTHER pumpkin recipe Katie! It’s the third in 2 weeks!” but don’t worry, this is a different orange squash! This pecan roasted butternut squash mixes the sweetness of pecans, with warm fall spices, and just a hint of sweet agave. The result is that perfect blend of sweet and savory perfect for a cool Autumn dinner.
