Gluten free baking has always felt a bit outside-my-wheelhouse to me so I have to admit, I was shocked when these Pumpkin Muffins came out of the oven. They’re just the right texture- like an oaty pumpkin bread- just the right sweetness (especially when you hit those little chunks of brown sugar I didn’t mix well!), and most importantly brimming with spicy fall pumpkin-ness! Add to that the protein rich Greek Yogurt and, I’ll be honest, this recipe coming out this good was probably a deliciously happy accident!
