Chia Seed Pudding is one of those too good to be true combos. It’s delicious, it’s easy to make, it’s portable for on the run means & snacks, it’s even my buzz word: customizable! I know it looks (and maybe even sounds) a little scary, but really if you like yogurt and toppings and one bowl no-fail recipes you’ll like chia pudding!

It’s a vegetable dessert recipe that gets you to eat more fruit! Of course you could go spreading it on cupcakes or cookies or something more decidedly dessert-ish but if you’re like me and go for the apple dip you’re topping your fruit with your veggies and loving it!
Gluten free baking has always felt a bit outside-my-wheelhouse to me so I have to admit, I was shocked when these Pumpkin Muffins came out of the oven. They’re just the right texture- like an oaty pumpkin bread- just the right sweetness (especially when you hit those little chunks of brown sugar I didn’t mix well!), and most importantly brimming with spicy fall pumpkin-ness! Add to that the protein rich Greek Yogurt and, I’ll be honest, this recipe coming out this good was probably a deliciously happy accident!
