Now it is!) of opening a small business, easy meals have become king in my kitchen so today I wanted to share with you one of my easiest but yet tastiest recipes for the busy bee. Flannel shirts, hot cups of tea, and Spiced Lentil Soup, yup, winter’s here and I am so excited! Why? Because it’s soup season! Maybe I’m just a little weird, but you know that interview question “if you could only eat one food for the rest of your life what would it be?” and any normal person would probably say mac and cheese or guacamole or chocolate? Yeah, I say soup. It’s warm and filling and I can fill it with my favorite things so whatever I’m in the mood for, it’s always the right choice. That’s not even mentioning all the perks of one pot meals! Therefore, I warn you now, Fresh Fit Foodie is probably going to turn into Fresh Fit Soupie until I have to pack away my fuzzy winter socks!

Let’s just call this Sriracha Hummus recipe my gift to you this holiday season. It’s quick, it’s cheap, it’s creamy and smooth and just about the most delicious thing you could do to your food. Seriously, carrots? WAY better with sriracha hummus. Rice bowls? DEFINITELY better with sriracha hummus. Sandwiches? This stuff was made for sandwiches it’s so good on them (okay I actually did design  this recipe for a sandwich but that’s besides the point). Really, if you like spicy food at all you owe it to yourself to make a batch of sriracha hummus, it’s that good.

This is what I call comfort food. Yes it takes a little extra effort (using two different pans whoa Katie slow down!), yes it takes a little more time, but it’s the kind of dish that just makes everything better, at least as long as there’s another bite on your plate! Filled with the absolute tastiest garlic roasted tomatoes, all the cheese, and tender squash, this Butternut Squash Lasagna is exactly what your dinner table (or Thanksgiving table) needs and maybe my favorite part about it- it’s noodle free! (Let’s be real, my favorite part is the cheese, definitely the cheese, but hey, the noodle-less-ness is a close second!).

Just a few bites in and I was hunting google for the recipe (sadly no amount of soup-love is sustainable at $4 per cup).
