Cheesy Portabella Pizzas

Easy, cheesy, portabella pizza! Great low carb snacks with plenty of protein! #glutenfree #healthy #recipes

5 ingredients, don’t you love when a recipe has just 5 ingredients? Now, I wasn’t totally sure if I should call these Cheesy Portabella Pizzas 5 ingredient or not because, well, do garlic powder and olive oil and oregano count? These are such staples in my kitchen that it’s pretty safe to assume if I don’t have any I don’t live there any more. So I’ll leave it up to you- if kitchen norms are freebies then these Cheese Portabella Pizzas are a 5 ingredient recipe, if not, well then this is 5 ingredients plus!

Butternut Squash Lasagna

No Noodle Butternut Squash Lasagna the ultimate fall comfort food and perfect for your Holiday buffet! #healthy #glutenfree #recipes

This is what I call comfort food. Yes it takes a little extra effort (using two different pans whoa Katie slow down!), yes it takes a little more time, but it’s the kind of dish that just makes everything better, at least as long as there’s another bite on your plate! Filled with the absolute tastiest garlic roasted tomatoes, all the cheese, and tender squash, this Butternut Squash Lasagna is exactly what your dinner table (or Thanksgiving table) needs and maybe my favorite part about it- it’s noodle free! (Let’s be real, my favorite part is the cheese, definitely the cheese, but hey, the noodle-less-ness is a close second!).

Pumpkin Risotto with Mascarpone

This Pumpkin Risotto with Mascarpone is easier than you'd imagine, delicious, and healthy too! #glutenfree #recipes #healthy #pumpkin #risotto

Pumpkin Risotto with Mascarpone- sounds super fancy, right? And restaurants that charge you $28 want you to hear “risotto” and think “ooh fancy,” but I’ll let you in on a secret: it’s not. Risotto is hearty and homey and simple. It’s easy to make and beyond delicious and against everything you might have heard, cheap. So let’s introduce this recipe again but instead of thinking of money signs and bustling kitchens when you hear Pumpkin Risotto with Mascarpone, I want you to visualize a warm fall fire, a few simple ingredients, and a recipe you’ll want to make over and over (and you can make over and over without any “fancy” stuff).

One Pot Enchilada Quinoa

One Pot Enchilada Quinoa is one of the easiest dinner's you'll make, so #healthy and #glutenfree too! #recipes #onepot #quinoa

This is the easiest dinner you’ve ever made. Really, truly, this one pot enchilada quinoa is so easy I think it might even give sandwiches a run for their money on the easy recipes scale! It’s one of those dump everything in a pot and let the stove do all the work recipes, but even better than that, this enchilada quinoa comes in at maybe a dollar a serving, maybe. It’s cheap, it’s delicious, it’s easy, and, as if it could get better, it’s delicious hot or cold! I’ve been eating it for lunch all week but my meat loving husband has forgone his carnivorous ways for this vegetarian dish every night!

Parmesan Polenta with Lemony Sprouts

The easiest, cheesiest Parmesan Polenta with Lemon Sprouts and it's ready in 15 minutes! #healthy #glutenfree #recipes #quick #dinner #easy #cheesy

I started blogging as a college student with limited resources and even more limited time. If I wanted  to cook it meant dragging my pots, pans, ingredients, and everything else down to the dorm kitchen, cleaning the dorm kitchen, making food, eating food, cleaning up, then getting it all back upstairs. Even more challenging when you consider my schedule back then, but somehow I pulled it all together. Since then, I’ve always focused on easy, quick recipes that just-happen-to-be-good-for-you, but with this recipe, I think I’ve seriously outdone myself.
