Overnight Chia Pudding

Chia Seed Pudding is one of those too good to be true combos. It’s delicious, it’s easy to make, it’s portable for on the run means & snacks, it’s even my buzz word: customizable! I know it looks (and maybe even sounds) a little scary, but really if you like yogurt and toppings and one bowl no-fail recipes you’ll like chia pudding!

So to start out there’s the basic vanilla version. It’s simple but tasty so it will match with  whatever toppings you like. After that is the cinnamon pudding, it’s got a few extra spices in it but generally is the same recipe as the vanilla. Then comes the  green tea which changes up the recipe a bit because of the matcha powder. All three chia pudding recipes are super easy, really I hope they’ll be a great jumping off point for your own ideas and recipes!

In these recipes I use a combo of fat free plain Greek yogurt, soymilk, and agave because it’s what I like but please switch it around if you have other preferences! If you don’t eat dairy try using coconut or soy yogurt. Make it sweeter or less sweet depending on what you like. You can use vanilla yogurt or any other flavor too! It’s really just whatever you like so start with small batches (all the recipes below are for one pudding) and taste it out! You can play with the ratios and flavors as much as you like. 🙂

About those toppings tho….

If it shows up in a fro-yo place you could probably put it on your chia puddings, but to get you started, here’s way more topping ideas than you ever needed! 😀

  • Fresh: apples, bananas, blueberries, blackberries, cherries, figs, kiwi, mango, melon, orange, peaches, pears, plums, pomegranate seeds, pineapple, raspberries, strawberries
  • Dried: almonds, almond butter, apricots, banana chips, cashews, coconut, cranberries, dates, goji berries, hazelnuts, peanuts, peanut butter, pecans, pepitas, pineapple (ugh candied pineapple you are the best), pistachios, protein bar (pieces), walnuts
  • Even more?!?: cacao nibs, candied ginger, caramel, cinnamon, chocolate chips, cocoa powder, jam (all jams, any jam, every jam), matcha powder, oats
  • Really Katie stop now!!!: frozen mango, frozen blueberries, frozen any fruit really, bee pollen, hemp seeds, sunflower seeds, granola, fresh mint

Ready to get mixing? The recipe for each is just below the picture, chia seeds need at least 4 hours to really expand so I suggest making these one afternoon for a whole week of grab and go yum! Happy pudding!

INGREDIENTS for one pudding:

  • 1/2 cup fat free Greek Yogurt
  • 1/4 cup Soymilk
  • 2 Tbsps chia seeds
  • 0.5-1 Tbsp agave (depending on how sweet you like it)
  • 1/4 tsp pure vanilla extract
  • blackberries
  • pomegranate seeds

DIRECTIONS: Just mix it all up and enjoy!

INGREDIENTS for one pudding:

  • 1/2 cup fat free Greek Yogurt
  • 1/4 cup Soymilk
  • 2 Tbsps chia seeds
  • 0.5-1 Tbsp agave (depending on how sweet you want it)
  • 1/4 tsp pure vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger

DIRECTIONS: Just mix it all up and enjoy!

FOR THE TOPPING (makes 4 puddings worth of topping)

Heat 1 tsp butter on low heat (3 out of 10) with 1 green apple diced (skin on). Let that cook 3-4 minutes then top with 2 Tbsp brown sugar, 1/2 tsp cinnamon, 2 Tbsp golden raisins, and 2 Tbsp chopped pecans. Cook until apples are tender, about 2-3 minutes.

INGREDIENTS for one pudding:

  • 1/2 cup fat free Greek Yogurt
  • 1/4 cup Soymilk
  • 2 Tbsps chia seeds
  • 0.5-1 Tbsp sugar (not agave, something about it doesn’t work with the matcha, depends on how sweet you want it)
  • 2 tsp matcha
  • raspberries
  • coconut meat

DIRECTIONS: Just mix it all up and enjoy!
