5 ingredients, don’t you love when a recipe has just 5 ingredients? Now, I wasn’t totally sure if I should call these Cheesy Portabella Pizzas 5 ingredient or not because, well, do garlic powder and olive oil and oregano count? These are such staples in my kitchen that it’s pretty safe to assume if I don’t have any I don’t live there any more. So I’ll leave it up to you- if kitchen norms are freebies then these Cheese Portabella Pizzas are a 5 ingredient recipe, if not, well then this is 5 ingredients plus!

Technicalities aside, this is one of my favorite snacks but I only make it when mushrooms don’t cost a kidney. Exaggerating? Maybe, but when I’m paying $2 a mushroom it sure feels like an expensive snack, especially when it’s just 130 calories (silly when I’ll shell out $5.80 for a latte but there’s something about afternoon snacks that just makes my cheap bird chirp haha). However, this week Whole Foods took pity on me and sold 4 packs of these gorgeous, huge mushroom caps for just $4, too good to pass up really! But… I have a trick…

If your local grocery store isn’t lowering these coveted caps to reasonable prices, here’s what to do: just use regular mushrooms! Pull out the stem and make mini pizza poppers! It’s so much cheaper, delicious, and you can load up a plate of tasty, healthy goodness.

Bonus: they’re my favorite word… you guessed it… customizable! While I topped my caps with cheese and lots of it, you could really use whatever pizza toppings you like. Olives, hot peppers, spinach, it’s all good. And if you’re dairy sensitive or vegan just swap out the cheese for a dairy free cheese and don’t forget a generous sprinkle of Noosh! 🙂

Cheesy Portabella Pizzas

Ingredients
  1. 4 portabella mushrooms, stems pulled out
  2. 1/2 cup reduced fat Mozzarella
  3. 2 oz Cabot extra sharp light Cheddar, shredded
  4. 2 Tbsp Parmesan Cheese
  5. 1/2 cup your favorite tomato sauce
  6. 1/2 tsp olive oil
  7. 1/2 tsp oregano
  8. 1/2 tsp garlic powder
Instructions
  1. Heat oven to 400* lay out a sheet of tin foil in a pan with sides (so juices don’t leak) then spread olive oil around on the tin foil (just enough so the caps don’t stick)
  2. Spoon about 2 Tbsp tomato sauce into each cap, sprinkle with Mozzarella, then Parmesan, then Cheddar, then spices
  3. Bake 25 minutes until cheese is melty
